chicken satay noodles

It was so yummy I had to share the recipe
2 teaspoons ground coriander
2 teaspoons ground cumin
2 teaspoons ground turmeric
700 grams Chicken breast (or thighs work)
250 grams Hokkien noodles
6 green onions
150 grams fresh baby corn
2 tablespoons peanut oil
1 large carrot (sliced thinly)
2 tablespoons finely chopped fresh coriander leaves
Satay Sauce
1/2 cup crunchy peanut butter
1/2 cup coconut cream (I use lite)
1/2 cup chicken stock
2 tablespoons sweet chilli sauce
2 tablespoons soy sauce
1 tablespoon brown sugar
1 tablespoon lime juice
Combine ground coriander, cumin and turmeric in medium bowl, add chicken, mix well to coat with spices.
Place noodles in large heatproof bowl, cover with boiling water, separate with tongs; drain.
Chop onions and corn in diagonal pieces (about 2 inches each)
Chop carrot into thin pieces
Satay Sauce
Combine ingredients in medium jug and whisk until mixed.
Heat 1/2 the oil in wok or large fry pan, stir fry chicken in batches until browned. set chicken aside
Heat the rest of the oil in same pan and stir fry corn and carrot until just tender. Return the chicken and add noodles, onion, and satay sauce, stir fry until heated through, sprinkle with fresh coriander and serve
makes 4 large servings.
